Make It A Veggie Night!

Tonight I made dinner a quick fix. Veggie Chickpea pastry with Sweet potato coleslaw salad.  The filling is made of roasted kale, stew tomatoes, onions, garlic and Swiss chard.  The pastry was made with chickpea flour.  What a perfect combination to bake veggies in a veggie pastry!   The salad a simple cabbage and carrot slaw topped with sweet potatoes, grape tomatoes and thyme topped with dawa dawa garlic basil grape seed oil and and blueberry vinegar dressing.   Taste great!
